Making the transition to a vegetarian or vegan diet is difficult. In today's world of processed foods, it's challenging to find options made purely from plant based ingredients, even for foods that have no logical need for animal products (Italian salad dressing, bread crumbs or tomato based pasta sauce).
Finding alternatives to the foods I ate as a meat eater was difficult at first. Once I stopped looking at the food-world through the eyes of a meat eater and started seeing the plant based alternatives, I realized that giving up meat and animal products wasn't such a big deal. Being a vegan or vegetarian cook requires you to get a bit more creative. It's not as impossible as you would think to make delicious meals without animal products (meat, dairy and especially eggs),
When I tell people that I don't eat meat or animal products, one of the most common questions I get is, "if you don't eat meat, what foods can you possibly eat?" Many questioners think I have to starve myself due to of a lack of options. The truth is that there's plenty of non-animal foods out there that are both tasty and nutritious. My goal in sharing these recipes is to show people that vegan options are plentiful and delicious. Enjoy!
